Quick Lunch Box Recipe- Ivy Gourd Rice. Must Try Recipe :-)

The recipe for the present week is Ivy gourd rice which is very simple, yet delicious and healthy recipe. This can be served alongside Tomato Raita which fills in as a decent mix for it. So in your home, if your family members are disliking the taste of the ivy gourd, you can get ready like this and provide. Surely everybody will like the taste and ivy Gourd has its own health benefits.

2. Utilised as a medicine to cure asthma, bronchitis, jaundice.

3.Anti-oxidants present in this veggie helps in eliminating various illness conditions.

4.Obesity is prevented.

5.Good for Nervous System and prevents the accumulation of Kidney stones


 Let’s begin with the preparation

Servings – 2 Members

 ********************************


Ingredients:

·        Ivy Gourd:2 cups

·        Tomatoes:1

·        Onion :1

·        Garlic:5No’s

·        Roasted Peanut: Few

·        Coriander Leaves: Few to garnish

·        Mustard:1/2 tsp

·        Urad Dal:1/2tsp

·        Turmeric Powder:1/2tsp

·        Oil:3tsp

·        Hing:1/4 tsp

·        Cooked Rice:2 cups

·        Salt to taste

For Roast and Grind

·       Chana Dal:2 tsp.

·        Coriander seeds:3 tsp

·        Red Chilly:5


Procedure

·        Chop the vegetables needed.




 

·        Take the pan and sautΓ© the Chana dal, Coriander seed and red chilly for three minutes without adding oil. [Ignite in Medium Flame]




·        After few minutes, when the heat gets reduced blend the above mentioned ingredients and keep aside.



·        Take the pan and ignite in medium flame. Add Oil to it, after the oil gets heated, add mustard to it. Once the mustard flutters, add Urad dal and saute it until it turns golden brown. Add the chopped vegetables and roasted peanuts to it and saute it.




·        Add turmeric powder, salt accordingly and add the mixture which we blended to the pan and saute it again until the veggie gets cooked well[Sprinkle water and place the lid over the pan for ten minutes to get cooked]



 

·        Add Boiled rice to the cooked veggie and mix it well.Garnish with Coriander leaves and serve it with tomato raita.
